Old-Fashioned Oatmeal Bread Recipe
Ingredients:
1 & 3/4 c of boiled water
5 & 1/3 Tbsps of butter
1 Tbsp of salt
1/4 c of water (lukewarm)
2 pcs large lightly beaten eggs
1 c rolled oats (quick-cooking)
1/2 c of golden molasses
2 packs of dried yeast
A pinch of sugar (granulated)
6 c of flour (all-purpose)
Instructions:
Combine oats, salt, molasses, water and butter in large bowl. Allow to cool ’til lukewarm.
Add yeast into water (lukewarm) w/ sugar and “proof”. Add yeast to oat mix and stir well. Add in flour and eggs gradually. Pour it into oiled bowl and cover w/ a dampened towel. Refrigerate for 2 hrs.
Remove dough from your fridge. Knead for 2 mins to have bubbles removed. Divide and form into 2 loaves. Place dough loaves in heavily-greased and oat-coated loaf-shaped pans. Have it covered w/ a dampened towel and allow to rise in warm area ’til doubled (approx 2 hrs).
Bake at 375 degrees F for 45-50 mins or ’til done.
