Pan Dulce Recipe
Ingredients:
For the Dough:
2/3 c of milk
2 Tbsps of shortening
2 Tbsps of butter
2 pcs of eggs; well-beaten
1/3 c of milk
1 pack of yeast (dry)
1/2 tsp of sugar (granulated)
4 1/2 c of flour
1/2 c of sugar (granulated)
2 Tbsps of sugar (brown)
1/2 tsp of cinnamon
1/2 Tbsp of salt
For the Topping:
3 Tbsps of sugar (brown)
3 Tbsps of sugar (granulated)
1/2 tsp of cinnamon
3/4 c of flour
2 yolks of egg
1/4 c of butter
3/4 tsp of vanilla
Instructions:
Heat 2/3 c of milk with butter and shortening using saucepan just ’til the solid ingredients melt. Set mixture aside to be cooled in normal temperature for rooms. When cooled, add the eggs into mixture.
Heat 1/3 c of milk then add yeast as well as 1/2 tsp of sugar. Leave mixture alone ’til bubbles are forming on surface (in approximately 10 minutes). Add the egg-milk mixture. Stir.
Combine salt, cinnamon, 2 Tbsps of sugar (brown), 1/2 c of sugar and flour together. Add milk mixture, creating dough (medium), which is neither too wet nor too parched. Add water or floor when necessary. Knead dough 5-10 minutes. You can also knead dough using food processor (40 seconds).
Grease dough lightly, cover inside a bowl using damp dish towel then let dough double its size in approximately 1-1.5 hours. For the meantime, cream the ingredients for topping together.
Divide dough to 16 pieces of balls and create circles with 3″ diameter then arrange on cookie sheets. Mix 1 white of egg with 2 Tbsps of water, and then brush this mixture on dough. Cover each circles with topping thinly.
If preferred, cut lines (parallel) on top as design. Cover damp dish towel on bread and let them rise ’til their sizes double.(30-40 minutes). Bake (20 minutes) in preheated oven (375 degrees F).
