Pesto Chicken Bruschetta Recipe
Ingredients:
1 tsp of garlic; chopped coarsely
2 Tbsps of olive oil
8 slices of bread (sourdough, 1/4″ slices of diagonal pieces)
2 Tbsps of pesto
1/2 c of cheese (asiago); grated
1/4 tsp of pepper
12 slices of cheese (mozzarella)
4 halves of chicken breast (boneless & skinless)
2 pcs of tomatoes; sliced
Instructions:
Heat 1/2 tsp of garlic with 1 Tbsp of olive oil, then drop 4 pieces of the sliced bread and cook on moderate-high flame. Turn once and allow bread to toast (5-7 minutes); then take toasted bread off the pan. Drop the rest of the garlic and oil into pan and toast another batch of bread. Drizzle toasts with asiago.
Coat chicken with combined pepper and pesto on used skillet and cook on medium-high flame. Turn once and let chicken brown (8-10 minutes).
Arrange 3 mozzarella slices per bread and put tomato on top. Horizontally slice the chicken into half and put on top of tomato. Drizzle with Asiago cheese. This recipe creates 4 serving portions.
