Pina Colada Bread Recipe
Ingredients:
4 pcs of eggs (large)
1-1/4 c of oil
2 c of sugar (granulated)
1 tsp of coconut flavoring (or extract)
1 tsp of vanilla extract
1 tsp of orange flavoring (or extract)
1/4 c of juice (drained from canned crushed pineapple)
1/2 tsp of orange rind; grated
3 c of flour (all purpose)
1 tsp of salt
1 tsp of baking soda
1 tsp of cinnamon
20 oz of crushed pineapple (canned); drained
1/2 c of flaked coconut
1/2 c of cherries (Maraschino); chopped
1/2 c of macadamia (or other nuts)
Instructions:
Preheat the oven at 350 degrees Fahrenheit. Grease two 7×4 inch (loaf) pans and coat with flour. Lightly beat the eggs then add sugar and oil; stir them well. Add juice, rind, and extracts. Combine flour, soda, cinnamon, and salt; add onto the mixture of egg. Mix gently till it becomes moist.
Fold in the nuts and fruits; don’t over stir. Pour batter onto pans and bake at about 40-50 mins. Allow to cool inside the pans for ten mins before taking the bread out from the pans.
