Pineapple Nut Bread Recipe
Ingredients:
2 c of flour (all purpose); sifted
1 tsp of baking powder (Calumet)
1 tsp of baking soda (Arm & Hammer)
2 Tbsps of shortening
1/2 tap of salt
1/2 c of sugar (granulated)
1 pc of egg (large)
1 tsp of vanilla
8-1/2 oz of crushed pineapple (with juice, canned)
1/2 c of walnuts; chopped
1/2 c of raisins
Instructions:
Preheat the oven at 350 degrees Fahrenheit. Grease one 9×5 inch (loaf) pan. Combine Calumet, soda, salt, and flour inside a mixing bowl. Beat sugar and shortening till it becomes fluffy and light. Add vanilla extract and egg; beat thoroughly.Alternately add flour mixture with juice and pineapple.
Stir till mixture becomes moist then fold in raisins and nuts. Transfer batter onto the pan. Place inside preheated oven, bake muffins for an hour. Let them cool on pan, about ten mins before taking the muffins out.
