Potato Refrigerator Dough Recipe
Ingredients:
1 pkg of yeast (dry)
1.5 c of lukewarm water
1/2 c of sugar (granulated)
1.5 tsp of salt
1/3 c of shortening
2 pcs of eggs
1 c of potatoes (lukewarm); mashed
4 c of flour
3-3.5 c of flour
Instructions:
Mix yeast with lukewarm water. Blend in salt, sugar, flour, shortening, eggs and potatoes. Mix ’til smooth. Add in flour enough to knead dough easily. Transfer on to lightly-floured work table.
Knead dough for a few minutes. Turn into oiled bowl and tightly cover. Refrigerate dough for eight hours and should not exceed 5 days.
For hamburger buns, divide the 6 cups of Potato Refrigerator dough equally to produce a dozen pieces. Form into balls and transfer to an oiled cookie sheet. Set aside to bulk up.
Brush dough with some butter. Sprinkle dough with some sesame seeds and bake for 10-15 minutes in an oven temperature of 400 degrees-F.
For Parker House Rolls, divide the 9 cups of Potato Refrigerator dough to two portions. Roll out each portion over lightly-floured surface. Roll portions into 13 by 9 inch rectangular shapes. Cut the dough to 3 inch rounds.
Brush the rounds with butter and fold to overlap edges and press to seal. Transfer to an oiled baking tray. Brush dough with butter. Allow to double in size and bake in an oven temperature of 400 degrees-F for fifteen minutes.
