Prune-Nut Bread Recipe
Ingredients:
3/4 c of juice (prune)
1/4 c of water
1/2 c of prunes (pitted); chopped coarsely
3 Tbsps of butter (or margarine)
1 pc of egg; beaten slightly
3/4 tsp of vanilla
1-1/2 c of flour (all purpose)
1 tsp of baking soda (Arm & Hammer)
1/8 tsp of salt
1/2 c of sugar (granulated)
1/2 c of pecans; chopped
Instructions:
Combine water and juice inside a saucepan; let it boil. Once boiling, take out from the heat then add butter and prunes; stir to combine. Let the mixture cool into lukewarm. Once cooled, add vanilla and egg; stir them well. Combine baking soda, flour, salt, granulated sugar, and pecans; add the mixture of prunes. Stir gently till the mixture becomes moist, do not over stir.
Pour onto a (greased and floured) 9×5-inch (loaf) pan. Place inside the oven and bake, 325 degrees Fahrenheit for 50-55 mins. Let it cool inside the pan, about ten mins, before removing the bread from the pan.
