Pumpkin Cranberry Bread Recipe
Ingredients:
3 c of flour (all purpose)
2 tsps of baking soda (Arm & Hammer)
1-1/2 tsps of salt
5 tsps of pumpkin pie spice
3 c of sugar (granulated)
15 oz of Pure Pumpkin (canned)
4 pcs of eggs (large)
1 c of vegetable oil (or canola oil)
1/2 c of juice (orange)
1 c of cranberries (fresh or frozen)
Instructions:
Preheat the oven at 350 degrees Fahrenheit. Grease two 9×5-inch (loaf) pans and coat with small amount of flour. Combine spice, flour, salt, and soda inside a mixing bowl; mix them well. Combine pumpkin, sugar, eggs, juice, and oil inside a mixing bowl; whisk or beat till blended well.
Add the mixture of pumpkin onto the mixture of flour; stir gently till moistened then gently add the cranberries. Transfer the mixture onto pans. Place inside the oven and bake, about 60-65 mins. Let bread cool inside the pans for ten mins before removing them onto the wire to be completely cooled.
