Pumpkin Pudding Bread Recipe

Ingredients:

5 pcs of eggs (large)
1-1/4 c of vegetable oil (or canola oil)
15 oz of pumpkin (solid-packed)
2 c of flour (all purpose)
2 c of sugar (granulated)
2 boxes of regular pudding mix (vanilla, small)
1 tsp of baking soda (Arm & Hammer)
1 tsp of cinnamon (ground)
1/2 tsp of salt

Instructions:

Beat the eggs inside a bowl. Add pumpkin and oil; beat till the mixture has smoothened. Combine flour, sugar, pudding mix, soda, cinnamon, and salt; gradually add onto the mixture of pumpkin, while beating continuously.

Once well incorporated, pour the batter onto 2 (greased and floured) 8×4x2-inch pans. Place inside the oven and bake for 75-80 mins, 325 deg Fahrenheit. Let the bread cool inside the pan for ten mins before taking them out from the pans, transfer on the racks and let cool down thoroughly.
