Rice Flour Bread Recipe
Ingredients:
2 tsps of sugar (granulated)
1/2 c of water (warm)
1 pack of yeast (active & dry)
1 c of flour (brown rice)
1/4 c of shortening (vegetable)
1 & 1/4 c of water
2 c of flour (white rice)
1/4 c of sugar (granulated)
1 Tbsp of dry pectin or 4 tsps of xanthan gum
1/3 c of soy powder or 2/3 c of dry milk (non-instant)
2 pcs of eggs
1.5 tsps of salt
Instructions:
Dissolve 2 tsps of sugar with 1/2 c of water into bowl, then add yeast and set mixture aside ten minutes ’til the froth reaches the top nearly. Using saucepan, dissolve shortening into water by heating them. Then cool the shortening ’til lukewarm.
In bowl for mixer, mix all ingredients (dry) and add the yeast mixture. Blend them well then add the shortening mixture. Blend them again well before adding the eggs then knead dough.
Allow the dough to rise and stand in warm area ’til it doubles in size within 1 hour. Fill 3/4 of loaf pans (greased) with dough and allow to rise once again. Then bake (400 degrees F) for ten minutes. Cover pans with foil then bake fifty minutes.
Immediately take bread off the pans and allow them to be cooled on wire racks.
