Southern Buttermilk Cornbread Recipe
Ingredients:
1 c of flour (all-purpose)
1 c of cornmeal (yellow, blue or white)
2-4 Tbsps of sugar (granulated)
1 Tbsp of baking powder
2 pcs of eggs
1/4 tsp of salt
1 c of buttermilk or mil (sour)
1/4 tsp of baking soda
1/4 c of oil (vegetable)
Instructions:
Prepare two 9″ by 5″ rectangular bread pans or a 9″ baking square pan by brushing oil or butter on it. Mix together the cornmeal, flour, salt, baking powder, sugar as well as soda into large bowl. In separate bowl, whisk together the sourmilk or buttermilk, eggs as well as the oil, then combine buttermilk with the flour and mix just ’til flour is moist (mixture should have lumps).
Pour mixture into pans and bake, 425 degrees F for 20-25 mins. or ’til breads turns gold-brown in color. Best served warm. You may freeze loaves. Just re-heat at 375 degrees F for 25 mins prior to serving.
