Southern Cheese Spoon Bread Recipe
Ingredients:
3 pcs of egg
1 c of cornmeal (yellow or white)
2 c of water
1 tsp of salt
1.5 c of cheese (sharp Cheddar); shredded
2 Tbsps of margarine or butter
1 c of milk
1 tsp of baking powder
Dash of pepper (cayenne)
Instructions:
Separate yolks of eggs from whites then put in different bowls. Leave mixture in room temp, then in another mixing bowl (medium), mix together the salt and cornmeal. In saucepan (medium), boil butter and water on high flame. Pour contents into the cornmeal then beat. Put in the cheese then continue beating until cheese melts; pour in the milk into the cornmeal-cheese and beat thoroughly using whisk ’til mixture is smooth. Put aside and leave in room temp. Preheat the oven, 375 deg Fahrenheit.
Lightly brush two-quart casserole with solid shortening (vegetable). Beat the eggwhites with an electricity-operated mixer (high speed) ’til peaks will hold stiff. Then beat yolks with mixer until mixture becomes light and thick. Use scraper to fold eggwhites, cayenne, baking powder and eggyolks to the cornmeal ’til combined. Pour on casserole and bake for 55-60 mins. or ’til color is flaky and golden. Best served hot accompanied with butter.
