Spiced Pineapple Scones Recipe
Ingredients:
3 c of all purpose flour
1/2 tsp of salt
1/3 c of sugar (granulated)
2.5 tsps of baking powder
A can of crushed pineapples (with juice; 8 ozs)
3/4 c of margarine or butter
1/2 tsp of cinnamon; ground
Milk or light cream
3 Tbsps of almonds or nuts (Macadamia); chopped
1 Tbsp of sugar (granulated)
Instructions:
Sift 1/3 c of sugar, salt, flour and baking powder together into a large-sized bowl. Add in margarine or butter ’til mixture is crumbly. In center of mixture, form well. Add in pineapple without draining ’til flour mixture is dampened.
Knead the dough 10-12 times onto a lightly-floured work table. Pat dough 1/4-inch thick. Use a lightly-floured 2.5 inch cookie cutter and transfer to a cookie sheet. Use milk or cream to brush the tops.
For the toppings, blend nuts, cinnamon and a tablespoon of sugar together. Coat every scone with one teaspoon or so of mixture. Bake for 15 minutes ’til golden-brown at a 425 degree-F oven. Best served warm. This yields 21 servings.
