Spicy Apricot Bread Recipe
Ingredients:
1.5 c of flour (whole wheat)
3/4 c of flour (all-purpose)
3/4 c of buttermilk
1/2 c of pineapple juice
1/3 c of apricots (dried & chopped)
3 Tbsp of sugar (brown)
2 Tbsp of oil (vegetable)
2 tsp of baking powder
1 tsp of baking soda
1 tsp of ginger (ground)
1 tsp of coriander (ground)
1 tsp of cinnamon (ground)
1 pc of egg
Instructions:
Lay the pineapple and apricots juice on saucepan. Heat it over a medium flame until it is bubbling; take it off from the flame and let it be cooled. Preheat the oven 350 deg Fahrenheit then grease 9″ x 5″ bread pan, lightly. Combine together the whole wheat and all purpose flours, cinnamon, coriander, ginger, sugar (brown), and baking powder in bowl.
Then, mix the egg, buttermilk and oil (vegetable) in another bowl. Stir the buttermilk mixture slowly into the flour ’til blended. Spread batter to the pan for baking. Bake 50 mins ’til toothpick placed in middle will come out without crumbs. Let it cool for 5 mins and loosen the sides with knife, then take it off from the pan then let it cool on rack prior to slicing.
