St. Joseph’s Bread Recipe
Ingredients:
2 – 3 c of flour (unbleached)
1/2 Tbsp of yeast (active & dry)
1 Tbsp of honey
1/2 tsp of salt
2/3 c of water (hot)
2 Tbsps of butter
1/3 c of raisins (golden)
3 Tbsps of aniseed
Cornmeal
Instructions:
Mix together aniseed, butter, salt, water, honey, yeast, and 1.5 c of flour in huge bowl. Add the raisins and continue beating 10 more minutes, while pouring flour when needed ’til dough stops sticking on bowl’s sides. Knead 8-10 minutes on surface that has been floured lightly ’til dough becomes elastic and smooth. Add flour when necessary.
Put dough into huge bowl that has been lightly oiled then coat dough on every sides. Then cover dough using cling wrap; place it in draft-free and warm area ’til it doubles its size (approximately an hour)
Prepare cookie sheet by greasing it and drizzle cornmeal on it or apply parchment unto it. Beat dough down prior to using and shape it into long bread loaf. Press loaf into cookie sheets and slash top with 3 or 4 half-inch diagonal lines. Then cover dough using dish towel; allow it to rise ’til it doubles its size (within 30 minutes).
Preheat oven (350 degrees F). Spray mist of vinegar or water to loaves prior to baking them and also two times while baking. Put read into oven and bake (40 minutes) then transfer on rack so that it will be cooled.
