Sweet Lemon Butter Recipe

Ingredients:

1/2 c of butter
1/2 c of freshly-squeezed juice (lemon)
1/4 tsp of salt
Grated lemon rind
3 pcs of eggyolks
1 & 1/2 c of sugar (granulated)
3 pcs whole eggs

Instructions:
Soften butter over indirect heat. Add in rind, juice, salt and sugar. Beat lightly eggs (whole) and yolks together. Blend into butter mixture at once.

Cook in a double-boiler, whisking and beating ’til smoothened and thick (20 mins). Cover, then keep in your fridge.
