Whole Grain Bread Recipe
Ingredients:
2 packs of yeast (dry)
3 c of water (lukewarm)
1 tsp of honey
1/4 c of molasses
1/3 c of oil
2 c of germ (wheat)
1 Tbsp of salt
7 c of flour (wheat, whole)
1 pc of egg; well-beaten (not necessary)
1/4 tsp of water (not necessary)
Sesame seeds; toasted (not necessary)
Instructions:
Dissolve the yeast into a cup of warm water (105 degrees Fahrenheit) with honey and soak for 5-10 minutes. In a separate bowl, combine the rest of the warm water with the molasses with oil then add wheat germ and salt. Mix together the molasses with the yeast mixtures.
Add 3.5 cups of flour (wheat) then add 3 additional cups, mixing thoroughly. Place dough on a board then with the flour available, knead it (12 minutes) ’til springy and smooth. Place dough on greased bowl gently turn to coat with oil. Let dough rise, while covered with towel, until double in size, approximately 1.5 hours.
Beat down then let dough rest (20 minutes) then knead for another five minutes. Slice dough in half and put in 2 greased bread pans. As an option, brush top surface with mixture of egg (beaten) and water, then sprinkle sesame seeds then let the bread rise for an hour.
Bake bread into preheated oven (350 degrees Fahrenheit) or ’til bread is done. Take out from bread pans and put on a rack so that it will be cooled. Slice thinly and serve with slice of butter on top.
