Zucchini Pineapple Bread Recipe
Ingredients:
2 c of sugar
3 pcs of eggs; well-beaten ’til foamy & light
1 c of oil or 1/2 c of oil and 1/2 c of applesauce
1 Tbsp of vanilla
1 can of pineapple (crushed, 8 ozs); well-drained
2 c of zucchini; grated
3 c of flour
1/3 Tbsp of baking soda
1/3 Tbsp of baking powder
1/3 Tbsp of cinnamon
1/3 Tbsp of allspice
1 c of raisins or nuts (not necessary); chopped
1/2 tsp of cloves
Instructions:
Mix lightly the 3 pcs of eggs, 2 c of sugar, oil (or oil with applesauce), 3 tsp of vanilla, 1 can of pineapple and 2 c of zucchini. Mix cloves, allspice, cinnamon, baking powder, soda and flour then sift them together into zucchini mix. Stir mixture ’til well-blended. Add raisins and nuts when preferred.
Pour mixture to four bread pans that have been floured and greased. Bake mixture at 350 degrees F, 35 mins.
